hmm. i have not try this recipe before. but seen this recipe from a tv show. so, just jot it down here, before i forget.
- chicken wings
- chicken gizzards
first boil a pot a water, then put the wings and gizzards in the water to cook. cook the wings for 15 to 20 minutes and the gizzards for about 20 to 25 minutes. please make sure the water have covered the wings and the gizzards.
once done, immediately take the wings and gizzards out and put them in a container that filled with ICE COLD water. yes. the reason to do that is to prevent the food from cooking further, also to shrink the skin, and make the skin texture crisp.
leave it for 5 minutes, then take the wings and gizzards out to drain dry.
- salt 盐
- crystal sugar 冰糖
- herbs: dang gui 当归，red dates 红枣, dou zong 杜仲, kei ji 枸杞, gui pi 桂皮, qing
- shao xing wine 绍兴酒, rice wine 米酒 （ratio 2:1）
put in all the above ingredients to boil for 5 minutes and then let it cool.
when the cooked herb wine is entirely cool, pour it to a container with lid and then add the wings and gizzards in the container too. cover the lid and keep the container in the fridge for 3 days.
yes. 3 days. the wine and herbs will taste the best on the 3rd day. serve cold.
ps: the cooked herb wine can be kept and used for another time, to marinate boiled eggs, wings, gizzards and all the food that you can think of. 🙂 oh, yes, before you keep the cooked wine in the fridge, remember to put it to stove, bring it to boil for a few minutes, then put it to cool and keep in the fridge again.
